An alternative to using pie crust is to use Bisquick. Bisquick is very tasty in place of the pie crust of a chicken pot-pie. Mix the dough according to the biscuit recipe on the box, and follow the same steps described above
Ingredients:
1 package of boneless skinless chicken breasts2 10oz cans of 98% fat free cream of chicken soup2 29oz cans of mixed vegetablesPie crust or BisquickDirectionsTo make a good homemade chicken pot-pie that’s within anybody’s budget, start with a package of boneless skinless chicken breasts. Chicken breasts are white meat and hold together much better than using dark meat such as legs and thighs. You won’t have to worry about the white meat being dry because of the sauce in the pie.Boil the chicken until it’s fully cooked, but be sure not to overcook it. The chicken should stay together when mixing it with the other ingredients and not fall apart. Depending on how much chicken there is and whether the chicken is frozen or not, this process takes approximately 30 minutes.When the chicken is finished cooking, drain and place it into a bowl of ice water. Placing the chicken in ice water is not necessary, however, the chicken will be hot and may take a while to cool off enough to handle. Ice water will reduce the chicken’s core temperature quickly. At this point, preheat the oven to 350 degrees.Chicken pot-pie is basically a casserole so you want to ensure than the contents of the pie are distributed equally throughout the dish, and avoid large chunks of ingredients. Once the chicken has cooled enough to handle without burning yourself, cut it into half inch pieces and place into a large mixing bowl.Fresh vegetables always make a dish taste better, but for low cost and time saving, canned vegetables will work just fine. Two 29 ounce cans of mixed vegetables will be plenty for the pie. If the vegetables are too big, feel free to cut them into quarter inch pieces. Drain the vegetables and add them to the bowl with the chicken.Now is the time to add the two 10 ounce cans of cream of chicken soup.
