How to Make Homemade Seitan
2 Cups of vital wheat gluten flour. This can be bought at any health food store.1-2 Tablespoon(s) of unbleached flour or whole wheat flour.1-2 Tablespoon(s) of nutritional yeast, (optional).Wet Ingredients:
1 and one half cups of water1 Tablespoon soy sauce, or any of the following: shouyu [link widoczny dla zalogowanych], tamari or amino acid soy sauce substitute1 tablespoon ketchupPut aside in a four-to-six quart pot:
Four to five quarts of water with: (these are optional for taste)1 Tablespoon of soy sauce, or any of the following: shouyu, tamari or amino acid soy sauce substitute1 Tablespoon ketchup1 basil leafGarlic powder and/or Mrs. Dash to taste

Put this flavored water on the burner and bring to a low boil. You will be using this water to "cook" the seitan.
Making The Seitan Dough
Put your wheat gluten, flour and yeast (the yeast is optional) in a large bowl and stir loosely.Slowly add the one and a half cup flavored water and keep stirring. The seitan will form quickly. You will get a light brown doughy "mass".Knead about ten times. Put on a floured chopping board and shape into a "log". Let the dough rest while you check on your large pot of boiling water, about ten minutes.Seitan must be cooked before using it in recipes. Cut the log into six pieces. These pieces will enlarge in the cooking water. Using a large slotted spoon, lower each piece in the cooking water. Be prepared, they will look a little like pieces of "brain"!Cook for about 45 minutes. The seitan is ready when it floats to the top.Remove the seitan and let it cool completely.
When the seitan is cooled, you may cut in any shape you like and begin to cook with it. It is best sauteed with a little bit of oil and used in stir-frys, but some people like to cut it in chunks and make stews with it. You can essentially use seitan wherever you use meat.
Seitan is great substitute for meat. Four ounces of seitan has 20 grams of protein. It is the gluten of wheat. There are several ways to make seitan, some with whole wheat flour or from wheat gluten flour itself. Here is recipe for using the gluten flour.
